Garnacha
Major variety of the D. O. Wines of Madrid, occupying 27 % of the whole of the vineyard inscribed in the Regulatory Council. It presents an average cluster, pyramidal, compact winged trunk, average oval grain, blue - purplish colour, dense enough skin, juicy flesh, simple flavour , sweet . Vigorous with pruning average(half)-late, robust vine shoots with short knots, it has a good adjustment to different zones. It adapts to diverse forms of conduction, providing that it allows certain expansion and long but not very rich pruning.
The production is good and constant (4.6 Kg/vine-stock). Early ripeness though later than the thin red wine; it is possible to adapt to the machine collection . The resistance to the diseases is normal. Its obtained a red colour clear ruby wine, of agreeable and special fruity harmonic flavour, of simple structure. It offers rose and tasty red wines in its youth, balance adapting to short upbringing. The produced wines combine well with the traditional food of Madrid : broths, “callos” (traditional meal) , vegetables as well as meat such as rabbit, birds, duck, etc.
