Tempranillo
It is the red principal variety of the zone occupying 15 % of the whole of the vineyard registered in the Regulatory Council D. O. Wines of Madrid, being the variety which crop is experiencing a major increase in the zone. It is considered to be like the finest variety of Spanish Vitis Vinífera, being cultivated under different synonymous in the whole national territory.
Variety of medium-low yield (3,3 Kg / vine-stock) and small, compact, tight, long and winged cluster. The grain is medium, round and of normal skin. Precocious so much in sprouting as in ripeness. It adapts to all kinds of soils with preference of areas orientated to the midday sunshine. It is slightly sensitive to the spring frosts but yes it is sensible to the hot spring winds. It is sensitive to the botritis. It is cultivated principally in low forms, with long pruning , respecting the balance production - quality. It gives wines of the highest quality. For its balance and stability of colouring matter they are excellent for young wines and upbringing, complementing itself perfectly with white and red meats, stews, light roasts, vegetables and blue cheeses.
